Exercise 3

Read what some vegetarian people eat for lunch. Highlight all the words referring to legumes in blue, grains in red, dairy products in yellow and fruit in green (using culinary classification). I.     I often eat late lunch due to the fact that I don’t get up early. I’d say that I usually have brunch though. I work a lot and I need to be full till the evening so I make myself some porridge. It contains rye, blueberries, some nuts and I add some honey as a natural sweetener. After a meal like that, I can keep going for quite some time. Additionally, I have a large cup of coffee with nut milk.
II.     My favourite food is a toast with avocado on it. I make my own bread to which I add a lot of oats because I like the flavour. I eat it with hummus made of chickpeas and I add olive oil to that to boost the taste. I’m British so I always pour some milk or plant milk into my tea.
III.     I live for salads, don’t get me wrong, I eat corn and peas and all this stuff but fresh vegetables are my thing especially when I add oranges to them. They combine well with lettuce and peppers. Occasionally, I have an egg but more often than not I substitute it with tofu scramble because I’m trying to become a proper vegan.
IV.     The moment I got to know seitan, I fell in love with it. I often go to this vegan place which serves burgers with it. They serve it with a portion of fries made of sweet potatoes. The roll is sprinkled with flax seeds, which gives the dish some crunch. And in the burger there’s raspberry sauce and onions and cheese. I simply love it.
V.     My mum makes perfect oyster mushroom chops. She prepares a pancake batter – you know, a mixture of flour, soya milk and eggs, and dips the mushrooms in it, and fries them on a pan. She puts that on a plate with a dip made of yoghurt to which she adds some plums. No one can resist that!

Fill in each gaps with the proper word. There are two vocabulary items you don’t need. I’m a blogger and I run my own culinary blog. I often visit restaurants and eat different kinds of dishes. I often choose vegetarian options because I like trying new things. I like it when my meal contains exotic 1.1. acids, 2. pork, 3. unprocessed | raw, 4. debunk, 5. serving, 6. agar, 7. digestion, 8. substitute, 9. ingredients, 10. indulge in, 11. grains, 12. in, 13. flax, 14. balanced – ones that I haven’t used in my kitchen before, to get some inspiration for later. My latest discovery are 2.1. acids, 2. pork, 3. unprocessed | raw, 4. debunk, 5. serving, 6. agar, 7. digestion, 8. substitute, 9. ingredients, 10. indulge in, 11. grains, 12. in, 13. flax, 14. balanced seeds which you can use as a 3.1. acids, 2. pork, 3. unprocessed | raw, 4. debunk, 5. serving, 6. agar, 7. digestion, 8. substitute, 9. ingredients, 10. indulge in, 11. grains, 12. in, 13. flax, 14. balanced for eggs – I ordered a perfect vegan cake last weekend and I’m telling you, if I hadn’t known, I wouldn’t have been able to tell the difference. It also contained 4.1. acids, 2. pork, 3. unprocessed | raw, 4. debunk, 5. serving, 6. agar, 7. digestion, 8. substitute, 9. ingredients, 10. indulge in, 11. grains, 12. in, 13. flax, 14. balanced instead of gelatin and it tasted like real jelly but without this artificial flavour. The chef didn’t use flour, he ground 5.1. acids, 2. pork, 3. unprocessed | raw, 4. debunk, 5. serving, 6. agar, 7. digestion, 8. substitute, 9. ingredients, 10. indulge in, 11. grains, 12. in, 13. flax, 14. balanced like oats and rye and used plant milk to mix everything together. The result was surprising – it was like having a diet cake rich 6.1. acids, 2. pork, 3. unprocessed | raw, 4. debunk, 5. serving, 6. agar, 7. digestion, 8. substitute, 9. ingredients, 10. indulge in, 11. grains, 12. in, 13. flax, 14. balanced proteins and carbohydrates and packed with omega 7.1. acids, 2. pork, 3. unprocessed | raw, 4. debunk, 5. serving, 6. agar, 7. digestion, 8. substitute, 9. ingredients, 10. indulge in, 11. grains, 12. in, 13. flax, 14. balanced. At first I thought the 8.1. acids, 2. pork, 3. unprocessed | raw, 4. debunk, 5. serving, 6. agar, 7. digestion, 8. substitute, 9. ingredients, 10. indulge in, 11. grains, 12. in, 13. flax, 14. balanced was very small – just a little round cake on a huge plate – but when I ate the whole thing, I was really full. So who cares about 9.1. acids, 2. pork, 3. unprocessed | raw, 4. debunk, 5. serving, 6. agar, 7. digestion, 8. substitute, 9. ingredients, 10. indulge in, 11. grains, 12. in, 13. flax, 14. balanced chops or dairy products if you can eat delicious and 10.well-1. acids, 2. pork, 3. unprocessed | raw, 4. debunk, 5. serving, 6. agar, 7. digestion, 8. substitute, 9. ingredients, 10. indulge in, 11. grains, 12. in, 13. flax, 14. balanced plant-based food for dessert?
Next I’m willing to give 11.1. acids, 2. pork, 3. unprocessed | raw, 4. debunk, 5. serving, 6. agar, 7. digestion, 8. substitute, 9. ingredients, 10. indulge in, 11. grains, 12. in, 13. flax, 14. balanced food a try – I wonder how it tastes when you don’t cook it and eat everything cold. I hope I’ll be able to 12.1. acids, 2. pork, 3. unprocessed | raw, 4. debunk, 5. serving, 6. agar, 7. digestion, 8. substitute, 9. ingredients, 10. indulge in, 11. grains, 12. in, 13. flax, 14. balanced yet another myth connected with a vegetarian diet.
